Description

This Classic Filipino Sinigang recipe features a deliciously sour broth made with tamarind and a variety of fresh vegetables and proteins.


Ingredients

  • 2 pounds pork belly
  • 8 cups water
  • 1 cup tamarind paste
  • 2 tomatoes, quartered
  • 1 onion, quartered
  • 2 radishes, sliced
  • 1 cup water spinach (kangkong)
  • 1 eggplant, sliced
  • 2 green chili peppers
  • 2 tablespoons fish sauce


Instructions

  1. In a large pot, combine the pork belly and water. Bring to a boil and simmer until the meat is tender.
  2. Add the tomatoes and onion. Cook until the tomatoes are soft.
  3. Stir in the tamarind paste and fish sauce. Let it dissolve in the broth.
  4. Add the radishes and eggplant. Cook for about 5 minutes until tender.
  5. Add the green chili peppers and water spinach. Cook for another 2-3 minutes.
  6. Season to taste and serve hot.

Notes

  • For added sourness, adjust the amount of tamarind paste used.
