A traditional Egyptian dish featuring tender meat and flavorful okra in a savory stew.
Ingredients

- 1 pound lamb or beef, cut into chunks
- 1 pound okra, trimmed
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups beef or vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt to taste
- Black pepper to taste
- 1 tablespoon lemon juice
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until translucent.
- Add the garlic and meat to the pot, browning the meat on all sides.
- Stir in the diced tomatoes, broth, cumin, coriander, salt, and pepper. Bring to a simmer.
- Cover and cook for about 1 hour, or until the meat is tender.
- Add the okra and lemon juice, and simmer for an additional 20 minutes.
- Adjust seasoning and serve warm.
Notes
- Serve with rice or bread.
- For a thicker stew, you can blend some of the okra into the sauce.
