Description

A traditional Egyptian dish featuring tender meat and flavorful okra in a savory stew.


Ingredients

Scale
  • 1 pound lamb or beef, cut into chunks
  • 1 pound okra, trimmed
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups beef or vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon lemon juice


Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until translucent.
  2. Add the garlic and meat to the pot, browning the meat on all sides.
  3. Stir in the diced tomatoes, broth, cumin, coriander, salt, and pepper. Bring to a simmer.
  4. Cover and cook for about 1 hour, or until the meat is tender.
  5. Add the okra and lemon juice, and simmer for an additional 20 minutes.
  6. Adjust seasoning and serve warm.

Notes

  • Serve with rice or bread.
  • For a thicker stew, you can blend some of the okra into the sauce.
