A traditional Egyptian stew featuring tender meat and vibrant okra, rich in flavor and spices.
Ingredients

- 1 pound beef or lamb, cut into cubes
- 1 pound okra, trimmed
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 can diced tomatoes (14 oz)
- 4 cups beef or vegetable stock
- 3 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the minced garlic and cook for another minute.
- Add the cubed meat to the pot and brown on all sides.
- Stir in the ground cumin, coriander, and paprika.
- Add the diced tomatoes and stock. Bring to a boil, then reduce the heat and let simmer for about 1 hour or until the meat is tender.
- Add the okra to the stew and simmer for an additional 30 minutes.
- Season with salt and black pepper before serving.
Notes
- Serve with rice or bread for a complete meal.
- For a thicker stew, mash some of the okra before adding it to the pot.
