Description

A traditional Egyptian stew featuring tender meat and vibrant okra, rich in flavor and spices.


Ingredients

Scale
  • 1 pound beef or lamb, cut into cubes
  • 1 pound okra, trimmed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 can diced tomatoes (14 oz)
  • 4 cups beef or vegetable stock
  • 3 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the minced garlic and cook for another minute.
  3. Add the cubed meat to the pot and brown on all sides.
  4. Stir in the ground cumin, coriander, and paprika.
  5. Add the diced tomatoes and stock. Bring to a boil, then reduce the heat and let simmer for about 1 hour or until the meat is tender.
  6. Add the okra to the stew and simmer for an additional 30 minutes.
  7. Season with salt and black pepper before serving.

Notes

  • Serve with rice or bread for a complete meal.
  • For a thicker stew, mash some of the okra before adding it to the pot.
