A traditional Italian dish featuring braised veal shanks with vegetables and white wine, perfect for a comforting meal.

- 4 shanks beef osso buco
- 1 cup onion, chopped
- 1 cup carrot, chopped
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 1 cup white wine
- 2 cups beef broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
Instructions
- In a large pot, heat the olive oil over medium heat.
- Season the osso buco with salt and pepper, then sear in the pot until browned on all sides. Remove and set aside.
- Add the onion, carrot, celery, and garlic; sauté until onions are translucent.
- Deglaze the pot with white wine, scraping up any browned bits.
- Add the beef broth, rosemary, thyme, and return the osso buco to the pot.
- Bring to a simmer, cover, and cook on low heat for about 2 hours, or until the meat is tender.
- Serve hot, spooning the sauce over the osso buco.
Notes
- Best served with risotto or polenta.
- Can be prepared ahead of time and reheated for better flavor.
