Description

A traditional Italian dish featuring braised veal shanks with vegetables and white wine, perfect for a comforting meal.


Ingredients

  • 4 shanks beef osso buco
  • 1 cup onion, chopped
  • 1 cup carrot, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Season the osso buco with salt and pepper, then sear in the pot until browned on all sides. Remove and set aside.
  3. Add the onion, carrot, celery, and garlic; sauté until onions are translucent.
  4. Deglaze the pot with white wine, scraping up any browned bits.
  5. Add the beef broth, rosemary, thyme, and return the osso buco to the pot.
  6. Bring to a simmer, cover, and cook on low heat for about 2 hours, or until the meat is tender.
  7. Serve hot, spooning the sauce over the osso buco.

Notes

  • Best served with risotto or polenta.
  • Can be prepared ahead of time and reheated for better flavor.
