A rich and flavorful blood sausage spiced with cinnamon for a unique taste.
Ingredients

- 1 pound pig’s blood
- 1 pound pork fat
- 1 teaspoon ground cinnamon
- 1 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup onions, finely chopped
- 1/2 cup barley
Instructions
- In a large bowl, combine the pork fat, blood, spices, and chopped onions.
- Mix in the barley until thoroughly combined.
- Stuff the mixture into sausage casings.
- Twist the sausages into links and tie off the ends.
- Poach the sausages in simmering water for about 30 minutes.
- Remove and let cool before slicing.
Notes
- For a spicier version, add cayenne pepper to taste.
- Can be served with sautéed onions and apples.
