Description

A rich and flavorful blood sausage spiced with cinnamon for a unique taste.


Ingredients

Scale
  • 1 pound pig’s blood
  • 1 pound pork fat
  • 1 teaspoon ground cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup onions, finely chopped
  • 1/2 cup barley


Instructions

  1. In a large bowl, combine the pork fat, blood, spices, and chopped onions.
  2. Mix in the barley until thoroughly combined.
  3. Stuff the mixture into sausage casings.
  4. Twist the sausages into links and tie off the ends.
  5. Poach the sausages in simmering water for about 30 minutes.
  6. Remove and let cool before slicing.

Notes

  • For a spicier version, add cayenne pepper to taste.
  • Can be served with sautéed onions and apples.
