- 1 tablespoon fresh ginger, minced
Instructions
- Preheat oven to 400°F (200°C).
- Slice the pork tenderloin into 1-inch medallions.
- In a large skillet, heat olive oil over medium heat.
- Season pork medallions with cinnamon, salt, and pepper.
- Brown the medallions on both sides in the skillet.
- In a small bowl, mix together orange juice, honey, soy sauce, and ginger.
- Pour the sauce over the medallions and bring to a simmer.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes.
- Remove from oven and let rest before serving.
