Description

Perfectly tender pork medallions infused with the sweet and spicy flavors of cinnamon and orange.


Ingredients

  • 1 pound pork tenderloin
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup orange juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, minced


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the pork tenderloin into 1-inch medallions.
  3. In a large skillet, heat olive oil over medium heat.
  4. Season pork medallions with cinnamon, salt, and pepper.
  5. Brown the medallions on both sides in the skillet.
  6. In a small bowl, mix together orange juice, honey, soy sauce, and ginger.
  7. Pour the sauce over the medallions and bring to a simmer.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes.
  9. Remove from oven and let rest before serving.
