Description

Start your Christmas morning with these delicious bacon and egg medallions, a festive breakfast that will impress your family!


Ingredients

  • 8 slices bacon
  • 4 large eggs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup shredded cheese, optional


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Place the bacon on the prepared baking sheet and bake for 20 minutes or until crispy.
  4. While the bacon is baking, grease a muffin tin.
  5. Once the bacon is done, remove it from the oven and carefully wrap each slice around the edges of the muffin tin cups, creating a ring.
  6. Crack an egg into each bacon ring and sprinkle with salt and pepper.
  7. Bake for an additional 10-12 minutes, or until the eggs are set.
  8. Optionally, sprinkle with cheese and return to the oven for another 2 minutes until melted.
  9. Remove from oven, let cool slightly, and serve warm.
