Delicious and festive, this Christmas Crown of Pork is filled with a rich bacon stuffing that will impress your guests.
Ingredients

- 1 crown roast of pork
- 8 ounces bacon, diced
- 1 onion, chopped
- 2 celery stalks, chopped
- 4 cups bread cubes
- 1 cup chicken broth
- 1 teaspoon sage
- 1 teaspoon thyme
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook bacon until crispy; remove and set aside.
- In the same skillet, sauté onion and celery until soft.
- In a large bowl, combine bread cubes, bacon, onion, celery, chicken broth, and seasonings.
- Stuff the crown roast with the mixture.
- Place the roast in a roasting pan and cover with foil.
- Roast in the preheated oven for about 2.5 hours, removing the foil for the last 30 minutes.
- Let rest before slicing and serving.
Notes
- Make sure to let the roast rest for at least 15 minutes before slicing.
- This dish pairs well with cranberry sauce and roasted vegetables.
