- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup capers, rinsed
- 2 tablespoons fresh lemon juice
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, lemon zest, salt, and pepper.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides.
- Remove meatballs from skillet and set aside.
- In the same skillet, add chicken broth, capers, and lemon juice. Bring to a simmer.
- Add meatballs back to the skillet and cook for another 10 minutes until cooked through.
- Serve hot with fresh parsley.
Notes
- For a gluten-free option, use gluten-free breadcrumbs.
- Serve with pasta or over a bed of greens for a lighter meal.
