Description

Delicious Chicken Piccata Meatballs are a flavorful twist on traditional meatballs, infused with lemon, capers, and fresh herbs.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup capers, rinsed
  • 2 tablespoons fresh lemon juice


Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, lemon zest, salt, and pepper.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides.
  4. Remove meatballs from skillet and set aside.
  5. In the same skillet, add chicken broth, capers, and lemon juice. Bring to a simmer.
  6. Add meatballs back to the skillet and cook for another 10 minutes until cooked through.
  7. Serve hot with fresh parsley.
