Description

A flavorful and vibrant chicken pibil bowl featuring marinated chicken, fresh vegetables, and delicious toppings.


Ingredients

  • 2 pounds chicken thighs
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 3 tablespoons achiote paste
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 large onion, thinly sliced
  • 2 whole habanero peppers
  • 4 cups cooked rice
  • 1 cup chopped cilantro
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • Salt to taste


Instructions

  1. In a large bowl, combine orange juice, lime juice, achiote paste, garlic, cumin, oregano, and salt.
  2. Add chicken thighs to the marinade and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the oven to 375°F (190°C).
  4. Place marinated chicken in a baking dish and cover with foil.
  5. Bake for 30-35 minutes, or until the chicken is cooked through.
  6. Remove from the oven and shred the chicken using two forks.
  7. In a bowl, layer cooked rice, shredded chicken, onions, cilantro, tomatoes, avocado, and top with sour cream.
  8. Serve hot and enjoy!

Notes

  • For extra flavor, marinate the chicken overnight.
  • Adjust the number of habanero peppers based on your heat preference.
