- 2 pounds chicken thighs
- 1 cup orange juice
- 1/2 cup lime juice
- 3 tablespoons achiote paste
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 large onion, thinly sliced
- 2 whole habanero peppers
- 4 cups cooked rice
- 1 cup chopped cilantro
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1/2 cup sour cream
- Salt to taste
Instructions
- In a large bowl, combine orange juice, lime juice, achiote paste, garlic, cumin, oregano, and salt.
- Add chicken thighs to the marinade and refrigerate for at least 2 hours, preferably overnight.
- Preheat the oven to 375°F (190°C).
- Place marinated chicken in a baking dish and cover with foil.
- Bake for 30-35 minutes, or until the chicken is cooked through.
- Remove from the oven and shred the chicken using two forks.
- In a bowl, layer cooked rice, shredded chicken, onions, cilantro, tomatoes, avocado, and top with sour cream.
- Serve hot and enjoy!
Notes
- For extra flavor, marinate the chicken overnight.
- Adjust the number of habanero peppers based on your heat preference.
