Ingredients

- 1 pound chicken livers
- 1/2 cup bacon fat
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon fresh thyme, chopped
- 1/4 cup brandy or cognac
- 1/2 cup heavy cream
Instructions
- In a skillet, cook the chopped onion and garlic in bacon fat until soft and translucent.
- Add chicken livers, salt, pepper, nutmeg, and thyme; cook until livers are browned but still slightly pink inside.
- Deglaze the pan with brandy or cognac and cook for a few minutes, scraping up any browned bits.
- Transfer the mixture to a food processor and blend until smooth.
- Slowly add the heavy cream and blend until well combined.
- Transfer the mousse to a serving dish and refrigerate until set.
- Serve chilled with toasted bread or crackers.
Notes
- This mousse can be made a day in advance for the best flavor.
- Feel free to garnish with extra thyme or bacon bits before serving.
