Description

A luxurious and savory chicken liver mousse enriched with the richness of bacon fat.


Ingredients

Scale
  • 1 pound chicken livers
  • 1/2 cup bacon fat
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh thyme, chopped
  • 1/4 cup brandy or cognac
  • 1/2 cup heavy cream


Instructions

  1. In a skillet, cook the chopped onion and garlic in bacon fat until soft and translucent.
  2. Add chicken livers, salt, pepper, nutmeg, and thyme; cook until livers are browned but still slightly pink inside.
  3. Deglaze the pan with brandy or cognac and cook for a few minutes, scraping up any browned bits.
  4. Transfer the mixture to a food processor and blend until smooth.
  5. Slowly add the heavy cream and blend until well combined.
  6. Transfer the mousse to a serving dish and refrigerate until set.
  7. Serve chilled with toasted bread or crackers.

Notes

  • This mousse can be made a day in advance for the best flavor.
  • Feel free to garnish with extra thyme or bacon bits before serving.
