- 2 pounds beef cheek
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon paprika
- 1 teaspoon caraway seeds
- 2 bay leaves
- Salt to taste
- Black pepper to taste
- 3 tablespoons olive oil
- 3 large carrots, sliced
- 2 medium potatoes, diced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cheek and brown on all sides.
- Remove beef and add onion and garlic, sautéing until soft.
- Stir in tomato paste, paprika, and caraway seeds.
- Add beef back to pot along with beef broth, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 2 hours.
- Add carrots and potatoes, cooking for an additional 30 minutes or until vegetables are tender.
- Remove bay leaves and serve hot.
Notes
- This dish tastes even better the next day as the flavors meld.
- Serve with crusty bread for dipping.
