Description

A rich and creamy bisque made from charred marrow bones, perfect for a comforting meal.


Ingredients

Scale
  • 2 marrow bones
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Fresh herbs for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place marrow bones on a baking sheet, brush with olive oil, and roast for 30 minutes until charred.
  3. In a large pot, sauté onion, garlic, carrot, and celery until soft.
  4. Add roasted bones and broth to the pot, bring to a boil, then simmer for 30 minutes.
  5. Remove bones, allow to cool slightly, and scoop marrow into the pot.
  6. Blend the mixture until smooth, then stir in heavy cream.
  7. Season with salt and serve hot, garnished with fresh herbs.
