A rich and creamy bisque made from charred marrow bones, perfect for a comforting meal.

- 2 marrow bones
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt to taste
- Fresh herbs for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Place marrow bones on a baking sheet, brush with olive oil, and roast for 30 minutes until charred.
- In a large pot, sauté onion, garlic, carrot, and celery until soft.
- Add roasted bones and broth to the pot, bring to a boil, then simmer for 30 minutes.
- Remove bones, allow to cool slightly, and scoop marrow into the pot.
- Blend the mixture until smooth, then stir in heavy cream.
- Season with salt and serve hot, garnished with fresh herbs.
Notes
- For added flavor, consider adding some spices like thyme or smoked paprika.
