- 3 pounds roast beef
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons dried thyme
Instructions
- Preheat your charcoal grill for indirect heat.
- In a small bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, and thyme.
- Rub the spice mixture all over the roast beef.
- Place the roast on the grill away from direct heat and cover the grill lid.
- Grill for about 1.5 to 2 hours, or until the internal temperature reaches 135°F for medium-rare.
- Remove from the grill and let rest for 10-15 minutes before slicing.
