Description

Succulent roast beef grilled to perfection over charcoal.


Ingredients

  • 3 pounds roast beef
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried thyme


Instructions

  1. Preheat your charcoal grill for indirect heat.
  2. In a small bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, and thyme.
  3. Rub the spice mixture all over the roast beef.
  4. Place the roast on the grill away from direct heat and cover the grill lid.
  5. Grill for about 1.5 to 2 hours, or until the internal temperature reaches 135°F for medium-rare.
  6. Remove from the grill and let rest for 10-15 minutes before slicing.
