Ingredients

- 6 large eggs
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh chives
Instructions
- Hard boil the eggs, then peel and chop them.
- In a mixing bowl, combine chopped eggs, mayonnaise, Dijon mustard, salt, and pepper.
- Mix well until the ingredients are combined.
- Add in chopped chives and stir.
- Serve the egg salad on lettuce leaves or inside avocado halves.
Notes
- For a creamier texture, add more mayonnaise.
- This recipe can be made ahead of time and stored in the refrigerator for 3 days.
