Description

A rich and creamy pound cake made with cream cheese, ideal for carnivore diets.


Ingredients

  • 1 cup cream cheese
  • 1/2 cup butter, softened
  • 1 cup erythritol or sweetener of choice
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups almond flour


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, beat the cream cheese and butter until smooth.
  3. Add the erythritol and mix until well combined.
  4. Incorporate the eggs one at a time, mixing well after each addition.
  5. Add vanilla extract and salt, mixing again.
  6. Slowly add the almond flour, mixing until just combined.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before slicing and serving.

  • For best results, allow the cake to cool completely before slicing.
