- 1 cup cream cheese
- 1/2 cup butter, softened
- 1 cup erythritol or sweetener of choice
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups almond flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, beat the cream cheese and butter until smooth.
- Add the erythritol and mix until well combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Add vanilla extract and salt, mixing again.
- Slowly add the almond flour, mixing until just combined.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool before slicing and serving.
Notes
- For best results, allow the cake to cool completely before slicing.
- Can be stored in the refrigerator for up to a week.
