A flavorful and spicy Caribbean BBQ sauce that enhances grilled meats and vegetables.
Ingredients

- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons lime juice
- 2 tablespoons vegetable oil
- 1 tablespoon fresh ginger, grated
- 1 tablespoon garlic, minced
- 1 tablespoon allspice
- 1 tablespoon thyme
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 2 green onions, chopped
- 1/4 cup Scotch bonnet pepper, chopped (use less for milder sauce)
Instructions
- In a medium bowl, mix together the soy sauce, brown sugar, apple cider vinegar, lime juice, and vegetable oil.
- Add in the remaining ingredients and stir until well combined.
- Let the sauce sit for at least 30 minutes to allow the flavors to meld.
- Use the sauce to marinate meats or brush on during grilling.
- Store any leftovers in an airtight container in the refrigerator.
Notes
- This sauce can be adjusted in heat level by varying the amount of Scotch bonnet pepper used.
- Great as a marinade for chicken, pork, or grilled vegetables.
