Description

This capers and collagen-rich osso buco is a hearty, flavorful dish that brings a unique twist to the classic Italian recipe.


Ingredients

Scale
  • 4 shanks osso buco
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 2 cups beef broth
  • 2 tablespoons capers, rinsed and chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon thyme
  • 1 teaspoon bay leaf
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Season the osso buco shanks with salt and pepper, then brown on all sides.
  3. Remove shanks and set aside.
  4. Add onion, carrots, and celery. Sauté until soft.
  5. Add garlic and cook for another minute.
  6. Pour in white wine and scrape up any browned bits from the bottom.
  7. Add beef broth, capers, parsley, thyme, and bay leaf.
  8. Return osso buco to the pot and bring to a simmer.
  9. Cover and cook on low heat for 2-3 hours until meat is tender.
  10. Serve hot, garnished with additional parsley if desired.

  • For added richness, serve with a sprinkle of grated Parmesan cheese.
