- 4 shanks osso buco
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup white wine
- 2 cups beef broth
- 2 tablespoons capers, rinsed and chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon thyme
- 1 teaspoon bay leaf
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat olive oil over medium-high heat.
- Season the osso buco shanks with salt and pepper, then brown on all sides.
- Remove shanks and set aside.
- Add onion, carrots, and celery. Sauté until soft.
- Add garlic and cook for another minute.
- Pour in white wine and scrape up any browned bits from the bottom.
- Add beef broth, capers, parsley, thyme, and bay leaf.
- Return osso buco to the pot and bring to a simmer.
- Cover and cook on low heat for 2-3 hours until meat is tender.
- Serve hot, garnished with additional parsley if desired.

- This dish pairs well with polenta or mashed potatoes.
- For added richness, serve with a sprinkle of grated Parmesan cheese.
