Ingredients

- 4 shanks veal shanks
- 1 tablespoon olive oil
- 1 cup onion, diced
- 1 cup carrot, diced
- 1 cup celery, diced
- 4 cloves garlic, minced
- 1 cup white wine
- 2 cups beef broth
- 2 teaspoons dried thyme
- 1 tablespoon capers, rinsed
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season veal shanks with salt and pepper and brown on all sides.
- Add onion, carrot, celery, and garlic; sauté until softened.
- Pour in white wine and let reduce by half.
- Add beef broth, thyme, and capers; bring to a simmer.
- Cover and cook on low heat for 2 hours, until meat is tender.
- Serve hot with the sauce.
