Description

This rich and flavorful osso buco dish is enhanced with capers for a unique twist and collagen for added nutritional benefits.


Ingredients

Scale
  • 4 shanks veal shanks
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 2 cups beef broth
  • 2 teaspoons dried thyme
  • 1 tablespoon capers, rinsed
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season veal shanks with salt and pepper and brown on all sides.
  3. Add onion, carrot, celery, and garlic; sauté until softened.
  4. Pour in white wine and let reduce by half.
  5. Add beef broth, thyme, and capers; bring to a simmer.
  6. Cover and cook on low heat for 2 hours, until meat is tender.
  7. Serve hot with the sauce.
