Description

A delicious and rich dish featuring short ribs coated in a cacao rub and cooked to perfection.


Ingredients

  • 4 pounds beef short ribs
  • 1/2 cup unsweetened cocoa powder
  • 2 tablespoons brown sugar
  • 2 tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 2 cups beef stock
  • 1/4 cup red wine vinegar


Instructions

  1. Preheat the oven to 200°F (93°C).
  2. In a bowl, combine cocoa powder, brown sugar, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.
  3. Rub the mixture generously over the short ribs.
  4. In an oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs until browned on all sides.
  5. Add beef stock and red wine vinegar to the pot.
  6. Cover and transfer the pot to the oven. Cook for 8 hours or until ribs are tender.
  7. Remove from the oven and let rest before serving.

Notes

  • For extra flavor, let the short ribs marinate in the rub overnight.
  • Serve with creamy mashed potatoes or polenta for a hearty meal.
