- 4 pounds beef short ribs
- 1/2 cup unsweetened cocoa powder
- 2 tablespoons brown sugar
- 2 tablespoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 2 cups beef stock
- 1/4 cup red wine vinegar
Instructions
- Preheat the oven to 200°F (93°C).
- In a bowl, combine cocoa powder, brown sugar, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.
- Rub the mixture generously over the short ribs.
- In an oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs until browned on all sides.
- Add beef stock and red wine vinegar to the pot.
- Cover and transfer the pot to the oven. Cook for 8 hours or until ribs are tender.
- Remove from the oven and let rest before serving.
Notes
- For extra flavor, let the short ribs marinate in the rub overnight.
- Serve with creamy mashed potatoes or polenta for a hearty meal.
