- 4 pounds beef short ribs
- 1 cup unsalted butter
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt to taste
- Freshly ground black pepper to taste
- 4 egg yolks
Instructions
- Preheat the oven to 300°F (150°C).
- In a large oven-safe pot, melt the butter over medium heat.
- Season the short ribs with salt and pepper, then sear them in the melted butter until browned on all sides.
- Add the chopped onion and minced garlic, cooking until softened.
- Pour in the beef broth and add the rosemary and thyme.
- Cover the pot and transfer it to the oven. Braise for 3 hours, or until tender.
- Remove the pot from the oven and let the ribs rest for a few minutes.
- Serve the ribs topped with a raw egg yolk.
Notes
- For a richer flavor, let the short ribs marinate in the butter overnight before cooking.
- Serve with crusty bread to soak up the delicious sauce.
