Description

A rich and flavorful dish featuring tender sweetbreads sautéed with burnt orange and aromatic spices.


Ingredients

Scale
  • 1 pound sweetbreads
  • 2 oranges, zested and juiced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Soak the sweetbreads in cold water for several hours, changing the water periodically.
  2. Drain and blanch in boiling water for 5 minutes, then cool under cold water.
  3. Remove the membranes and cut into bite-sized pieces.
  4. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  5. Add garlic and sauté for another minute.
  6. Add sweetbreads to the skillet and cook until golden brown.
  7. Add orange juice and zest, thyme, salt, and pepper and cook for a few more minutes.
  8. Serve warm with additional orange zest on top.

Notes

  • Make sure to soak sweetbreads overnight for best results.
  • This dish pairs well with a side of sautéed vegetables.
