- 1 pound sweetbreads
- 2 oranges, zested and juiced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
Instructions
- Soak the sweetbreads in cold water for several hours, changing the water periodically.
- Drain and blanch in boiling water for 5 minutes, then cool under cold water.
- Remove the membranes and cut into bite-sized pieces.
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add garlic and sauté for another minute.
- Add sweetbreads to the skillet and cook until golden brown.
- Add orange juice and zest, thyme, salt, and pepper and cook for a few more minutes.
- Serve warm with additional orange zest on top.
Notes
- Make sure to soak sweetbreads overnight for best results.
- This dish pairs well with a side of sautéed vegetables.
