- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 2 tablespoons dendê oil (palm oil)
- 1 tomato, chopped
- 1/4 cup chopped cilantro
Instructions
- Marinate the fish with salt, pepper, and lime juice for about 30 minutes.
- In a large pot, heat the olive oil over medium heat.
- Add the onion, bell pepper, and garlic, sautéing until softened.
- Stir in the marinated fish and cook for about 5 minutes.
- Add the coconut milk and dendê oil, then bring to a simmer.
- Incorporate the chopped tomato and allow to cook for another 10-15 minutes, until the fish is cooked through.
- Garnish with cilantro before serving.
Notes
- This dish is best served with rice and farofa.
- Feel free to adjust the spiciness by adding chili peppers.
