Scale
  • 1 pound firm white fish (such as cod or snapper)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 2 tablespoons dendê oil (palm oil)
  • 1 tomato, chopped
  • 1/4 cup chopped cilantro

Instructions

  1. Marinate the fish with salt, pepper, and lime juice for about 30 minutes.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion, bell pepper, and garlic, sautéing until softened.
  4. Stir in the marinated fish and cook for about 5 minutes.
  5. Add the coconut milk and dendê oil, then bring to a simmer.
  6. Incorporate the chopped tomato and allow to cook for another 10-15 minutes, until the fish is cooked through.
  7. Garnish with cilantro before serving.

  • Feel free to adjust the spiciness by adding chili peppers.
