Instructions
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat some oil over medium-high heat and sear the goat shank until browned on all sides.
- Remove the shank and sauté the onion, carrots, celery, and garlic until soft.
- Return the goat shank to the pot, and add the bone broth, thyme, and bay leaf.
- Bring to a simmer, cover, and transfer to the oven.
- Braise for about 4 hours, until the meat is tender and falling off the bone.
- Remove the shank, strain the broth if desired, and serve with the vegetables.
