Ingredients

  • 2 pounds goat shank
  • 4 cups bone broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat some oil over medium-high heat and sear the goat shank until browned on all sides.
  3. Remove the shank and sauté the onion, carrots, celery, and garlic until soft.
  4. Return the goat shank to the pot, and add the bone broth, thyme, and bay leaf.
  5. Bring to a simmer, cover, and transfer to the oven.
  6. Braise for about 4 hours, until the meat is tender and falling off the bone.
  7. Remove the shank, strain the broth if desired, and serve with the vegetables.
