- 2 pounds beef tripe
- 4 cups beef bone broth
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 bay leaves
- 1 teaspoon black peppercorns
- 1 teaspoon salt, or to taste
- 1 tablespoon olive oil
Instructions
- Clean the beef tripe thoroughly under cold water.
- In a large pot, heat olive oil over medium heat and sauté onions, garlic, carrots, and celery until soft.
- Add the beef tripe to the pot and stir for a few minutes.
- Pour in the beef bone broth and add bay leaves, black peppercorns, and salt.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 2-3 hours, or until the tripe is tender.
- Adjust seasoning if needed and serve hot.

- This dish is best served with crusty bread for dipping.
- The longer the broth simmers, the more flavor it will develop.
