Description

A hearty dish featuring tender beef tripe simmered in a rich and flavorful bone broth.


Ingredients

  • 2 pounds beef tripe
  • 4 cups beef bone broth
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 teaspoon salt, or to taste
  • 1 tablespoon olive oil


Instructions

  1. Clean the beef tripe thoroughly under cold water.
  2. In a large pot, heat olive oil over medium heat and sauté onions, garlic, carrots, and celery until soft.
  3. Add the beef tripe to the pot and stir for a few minutes.
  4. Pour in the beef bone broth and add bay leaves, black peppercorns, and salt.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 2-3 hours, or until the tripe is tender.
  7. Adjust seasoning if needed and serve hot.
