A rich and flavorful beef cheek braise perfect for festive occasions.

- 2 pounds beef cheeks
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 300°F (150°C).
- In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the beef cheeks until browned on all sides.
- Remove beef cheeks and set them aside. In the same pot, add onions and carrots, cooking until softened.
- Add garlic and cook for another minute.
- Stir in the beef broth, red wine, tomato paste, thyme, bay leaf, salt, and pepper.
- Return beef cheeks to the pot and bring to a simmer.
- Cover and transfer to the preheated oven. Cook for 3-4 hours until the meat is tender.
- Remove from oven, allow to rest, then serve.
Notes
- This dish can be made a day ahead; the flavors will develop overnight.
- Serve with mashed potatoes or crusty bread for a complete meal.
