Ingredients

- 2 bones of marrow
- 1 cup rendered chicken fat
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh herbs (thyme or rosemary)
Instructions
- Preheat the oven to 450°F (230°C).
- Place the bones in a roasting pan and roast for about 20-25 minutes until the marrow is soft and hot.
- Remove from the oven and let cool slightly.
- Scoop out the marrow into a bowl and mix with rendered chicken fat, salt, pepper, and herbs.
- Transfer to a jar and refrigerate.
Notes
- Serve on toasted bread for a rich appetizer.
- Can be used as a cooking fat for extra flavor.
