Description

Delicious and rich bone marrow schmaltz that enhances any dish with its unique flavor.


Ingredients

Scale
  • 2 bones of marrow
  • 1 cup rendered chicken fat
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh herbs (thyme or rosemary)


Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Place the bones in a roasting pan and roast for about 20-25 minutes until the marrow is soft and hot.
  3. Remove from the oven and let cool slightly.
  4. Scoop out the marrow into a bowl and mix with rendered chicken fat, salt, pepper, and herbs.
  5. Transfer to a jar and refrigerate.

Notes

  • Serve on toasted bread for a rich appetizer.
  • Can be used as a cooking fat for extra flavor.
