Ingredients

- 4 marrow bones
- 2 egg yolks
- 1 cup heavy cream
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Roast the marrow bones for about 15-20 minutes or until the marrow is soft.
- In a mixing bowl, combine softened marrow, egg yolks, and heavy cream.
- Season with salt and pepper.
- Blend the mixture until smooth.
- Pour the mixture into ramekins.
- Place the ramekins in a baking dish and fill the dish with water halfway up the sides of the ramekins.
- Bake for approximately 30-35 minutes or until just set.
- Remove from the oven and allow to cool slightly before serving.
Notes
- Serve with toasted bread or a green salad.
- Bone marrow can be rich; consider portion sizes.
