Description

A rich and creamy custard made with bone marrow and egg yolks, perfect as an indulgent starter or luxurious side dish.


Ingredients

Scale
  • 4 marrow bones
  • 2 egg yolks
  • 1 cup heavy cream
  • Salt to taste
  • Freshly ground black pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the marrow bones for about 15-20 minutes or until the marrow is soft.
  3. In a mixing bowl, combine softened marrow, egg yolks, and heavy cream.
  4. Season with salt and pepper.
  5. Blend the mixture until smooth.
  6. Pour the mixture into ramekins.
  7. Place the ramekins in a baking dish and fill the dish with water halfway up the sides of the ramekins.
  8. Bake for approximately 30-35 minutes or until just set.
  9. Remove from the oven and allow to cool slightly before serving.

  • Bone marrow can be rich; consider portion sizes.
