Tender venison medallions are marinated and cooked in a flavorful blueberry balsamic sauce.

- 1 pound venison medallions
- 1 cup fresh blueberries
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh rosemary, chopped
Instructions
- In a bowl, combine blueberries, balsamic vinegar, honey, olive oil, garlic, salt, pepper, and rosemary. Blend until smooth.
- Marinate the venison medallions in the mixture for at least 1 hour.
- Preheat a skillet over medium-high heat and add the marinated venison.
- Cook for about 3-4 minutes on each side until the venison is cooked to your desired doneness.
- Remove from heat and let rest for 5 minutes. Serve with the blueberry balsamic sauce drizzled on top.
