Description

Tender venison medallions are marinated and cooked in a flavorful blueberry balsamic sauce.


Ingredients

  • 1 pound venison medallions
  • 1 cup fresh blueberries
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped


Instructions

  1. In a bowl, combine blueberries, balsamic vinegar, honey, olive oil, garlic, salt, pepper, and rosemary. Blend until smooth.
  2. Marinate the venison medallions in the mixture for at least 1 hour.
  3. Preheat a skillet over medium-high heat and add the marinated venison.
  4. Cook for about 3-4 minutes on each side until the venison is cooked to your desired doneness.
  5. Remove from heat and let rest for 5 minutes. Serve with the blueberry balsamic sauce drizzled on top.
