Description

These braised short ribs are rich, tender, and full of flavor, perfect for a comfort meal.


Ingredients

Scale
  • 4 pounds bone-in short ribs
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs until browned on all sides, then remove and set aside.
  4. Add onion, carrots, and celery to the pot and sauté until softened.
  5. Add garlic and cook for another minute.
  6. Pour in the red wine and scrape the bottom of the pot to deglaze.
  7. Add beef broth, tomato paste, bay leaf, thyme, and the short ribs back to the pot.
  8. Bring to a simmer, cover, and transfer to the oven.
  9. Braise for about 3 hours or until the meat is tender.
  10. Serve with sauce and enjoy!

Notes

  • For extra flavor, marinate the ribs a day in advance.
  • Serve with mashed potatoes or polenta.
