These braised short ribs are rich, tender, and full of flavor, perfect for a comfort meal.
Ingredients

- 4 pounds bone-in short ribs
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 cup red wine
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 bay leaf
- 2 sprigs fresh thyme
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 325°F (163°C).
- Season the short ribs with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs until browned on all sides, then remove and set aside.
- Add onion, carrots, and celery to the pot and sauté until softened.
- Add garlic and cook for another minute.
- Pour in the red wine and scrape the bottom of the pot to deglaze.
- Add beef broth, tomato paste, bay leaf, thyme, and the short ribs back to the pot.
- Bring to a simmer, cover, and transfer to the oven.
- Braise for about 3 hours or until the meat is tender.
- Serve with sauce and enjoy!
Notes
- For extra flavor, marinate the ribs a day in advance.
- Serve with mashed potatoes or polenta.
