Ingredients

- 2 cups blood (pork or duck)
- 1 cup pork fat, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/2 teaspoon marjoram
- 1/4 teaspoon nutmeg
- 1/2 cup onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 egg
- 2 tablespoons cooking oil for frying
Instructions
- In a large bowl, mix the blood, pork fat, salt, black pepper, thyme, marjoram, nutmeg, onion, parsley, and egg until well combined.
- Form the mixture into patties.
- Heat oil in a skillet over medium heat.
- Fry the patties for about 4-5 minutes on each side until cooked through and browned.
- Serve hot.
Notes
- These patties can be frozen for later use.
- Adjust seasonings to taste.
- Best served with mustard or sauerkraut.
