Description

A delightful dish featuring blackened shrimp served over creamy fresh corn grits, enhanced with Pepper Jack cheese for a spicy kick.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups fresh corn kernels
  • 1 cup grits
  • 4 cups water
  • 1 cup Pepper Jack cheese, shredded
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons butter
  • Salt to taste
  • 1 tablespoon olive oil


Instructions

  1. In a pot, bring 4 cups of water to a boil and add grits, cooking until thickened.
  2. Stir in fresh corn and Pepper Jack cheese, mix until combined.
  3. In a skillet, heat olive oil and sauté shrimp with Cajun seasoning until blackened.
  4. Serve blackened shrimp over the corn grits.
  5. Garnish with additional corn if desired.
