Instructions
- In a pot, bring 4 cups of water to a boil and add grits, cooking until thickened.
- Stir in fresh corn and Pepper Jack cheese, mix until combined.
- In a skillet, heat olive oil and sauté shrimp with Cajun seasoning until blackened.
- Serve blackened shrimp over the corn grits.
- Garnish with additional corn if desired.
