- 1 bison ribeye roast
- 4 cloves garlic, minced
- 1/2 cup unsalted butter, softened
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon salt
- 1 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the softened butter, minced garlic, rosemary, thyme, salt, and black pepper.
- Rub the garlic butter mixture all over the bison ribeye roast.
- Place the roast in a roasting pan and insert a meat thermometer into the thickest part of the meat.
- Roast in the preheated oven until the thermometer reads 130°F (54°C) for medium-rare, about 1.5 hours.
- Remove the roast from the oven and let it rest for 15 minutes before slicing.
