Description

A deliciously rich and flavorful bison ribeye roast enhanced with garlic butter.


Ingredients

  • 1 bison ribeye roast
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the softened butter, minced garlic, rosemary, thyme, salt, and black pepper.
  3. Rub the garlic butter mixture all over the bison ribeye roast.
  4. Place the roast in a roasting pan and insert a meat thermometer into the thickest part of the meat.
  5. Roast in the preheated oven until the thermometer reads 130°F (54°C) for medium-rare, about 1.5 hours.
  6. Remove the roast from the oven and let it rest for 15 minutes before slicing.
