Ingredients

- 2 cups shredded birria meat
- 1 cup Oaxaca cheese, shredded
- 4 large flour tortillas
- 1/2 cup birria consommé
- 2 tablespoons oil for frying
Instructions
- Heat a skillet over medium heat.
- Spread some birria meat and shredded cheese on one half of each tortilla.
- Fold the tortilla over to form a half-moon shape.
- Brush the skillet with oil and place the quesadilla in it.
- Cook until the tortilla is golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve with birria consommé for dipping.
Notes
- For extra flavor, add onions and cilantro inside the quesadilla.
- These can be made ahead of time and reheated.
