Description

Delicious and healthy Bell Pepper Nachos made with fresh ingredients.


Ingredients

Scale
  • 3 large bell peppers
  • 1 cup shredded cheese
  • 1 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1 avocado, diced
  • 1/4 cup salsa
  • 1/4 cup jalapeños, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the bell peppers in half lengthwise and remove the seeds.
  3. Arrange the bell pepper halves on a baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and cumin.
  5. Bake for 10 minutes.
  6. Remove from the oven and layer black beans, corn, cheese, jalapeños, and avocado in the bell pepper halves.
  7. Return to the oven and bake for an additional 10-15 minutes until the cheese is melted.
  8. Serve with salsa.

Notes

  • For a spicier version, add more jalapeños.
  • Feel free to add your choice of protein or toppings.
