Delicious and healthy Bell Pepper Nachos made with fresh ingredients.
Ingredients

- 3 large bell peppers
- 1 cup shredded cheese
- 1 cup black beans, drained and rinsed
- 1/2 cup corn
- 1 avocado, diced
- 1/4 cup salsa
- 1/4 cup jalapeños, sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the bell peppers in half lengthwise and remove the seeds.
- Arrange the bell pepper halves on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and cumin.
- Bake for 10 minutes.
- Remove from the oven and layer black beans, corn, cheese, jalapeños, and avocado in the bell pepper halves.
- Return to the oven and bake for an additional 10-15 minutes until the cheese is melted.
- Serve with salsa.
Notes
- For a spicier version, add more jalapeños.
- Feel free to add your choice of protein or toppings.
