- 4 medium bell peppers
- 1 cup shredded cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn
- 1 jalapeño, sliced
- 1/4 cup salsa
- 1/4 cup sour cream
- 2 tablespoons chopped cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the bell peppers in half lengthwise and remove the seeds.
- Place the bell pepper halves on a baking sheet.
- Layer the black beans, corn, and jalapeños in each bell pepper half.
- Sprinkle shredded cheese on top.
- Bake in the preheated oven for 15-20 minutes until the cheese is melted.
- Remove from the oven and top with salsa, sour cream, and cilantro.
- Serve warm and enjoy!
