- 2 pounds beef, cut into cubes
- 2 onions, sliced
- 4 cloves garlic, minced
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 1/4 cup olive oil
- 1 bay leaf
- salt to taste
- black pepper to taste
- 1/4 cup red wine (optional)
- 1 teaspoon chili powder (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides. Remove and set aside.
- Add the onions and garlic to the pot, cooking until softened.
- Stir in paprika, cumin, and chili powder, then add the beef back to the pot.
- Add diced tomatoes, beef broth, bay leaf, salt, and pepper.
- If using, add red wine.
- Bring to a simmer, cover, and cook for about 1.5 hours until the beef is tender.
- Adjust seasoning as needed and serve hot.
Notes
- For a thicker sauce, let the dish simmer uncovered for the last 30 minutes.
- Serve with rice or crusty bread to soak up the sauce.
