Ingredients

Scale
  • 2 pounds beef, cut into cubes
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1/4 cup olive oil
  • 1 bay leaf
  • salt to taste

  • 1/4 cup red wine (optional)
  • 1 teaspoon chili powder (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides. Remove and set aside.
  3. Add the onions and garlic to the pot, cooking until softened.
  4. Stir in paprika, cumin, and chili powder, then add the beef back to the pot.
  5. Add diced tomatoes, beef broth, bay leaf, salt, and pepper.
  6. If using, add red wine.
  7. Bring to a simmer, cover, and cook for about 1.5 hours until the beef is tender.
