Instructions
- Cook the beef tongue in a pot of boiling salted water until tender, about 2-3 hours.
- Remove the tongue from the pot and let it cool.
- Once cool, peel the skin off the tongue.
- Using a sharp knife, slice the tongue thinly.
- Arrange the slices on a plate.
- Drizzle with olive oil and lemon juice.
- Season with salt and black pepper.
- Garnish with Parmesan shavings and fresh herbs.
- Serve immediately.
