Description

A hearty and nutritious potage made from beef pancreas, perfect for a comforting meal.


Ingredients

  • 500 grams beef pancreas
  • 1 liter beef stock
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add diced carrots and potatoes, cook for about 5 minutes.
  4. Add beef pancreas and beef stock, bring to a boil.
  5. Reduce heat and simmer for about 1 hour until pancreas is tender.
