- 1 liter beef stock
- 2 carrots, diced
- 2 potatoes, diced

- 1 tablespoon fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add diced carrots and potatoes, cook for about 5 minutes.
- Add beef pancreas and beef stock, bring to a boil.
- Reduce heat and simmer for about 1 hour until pancreas is tender.
- Season with salt and pepper, stir in fresh parsley before serving.
