- 2 cups basil-infused lard
- 2 pounds veal, cut into chunks
- 1 cup cherry tomatoes, halved
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh basil, chopped
Instructions
- Heat the basil-infused lard in a large skillet over medium heat.
- Add the veal chunks and cook until browned on all sides.
- Stir in the garlic, salt, and pepper, and sauté for another 2 minutes.
- Add the cherry tomatoes and balsamic vinegar, stirring to combine.
- Cover and simmer for 25 minutes, until veal is tender.
- Finish with fresh basil before serving.
Notes
- For a richer flavor, let the veal marinate in lard overnight.
- Serve with crusty bread to soak up the sauce.
