Ingredients

  • 1 pound salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 2 green onions, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large ripe avocado
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, pulse salmon until finely chopped.
  3. In a bowl, combine salmon, breadcrumbs, parsley, green onions, egg, garlic, lemon juice, salt, and pepper.
  4. Shape mixture into meatballs and place on a baking sheet.
