Description

A creamy and hearty soup that combines the flavors of a bacon cheeseburger with potatoes and cheese.


Ingredients

  • 6 slices bacon
  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups potatoes, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons green onions, sliced


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and crumble, leaving the drippings.
  2. Add the ground beef to the pot and cook until browned. Drain excess fat.
  3. Add onions and garlic, cooking until softened.
  4. Stir in chicken broth, potatoes, Worcestershire sauce, pepper, and paprika. Bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in cheese and cream until melted and creamy.
  7. Serve hot, topped with crumbled bacon and green onions.

Notes

  • For a bit of spice, add cayenne pepper to taste.
  • This soup is best served immediately but can be stored in the fridge for up to 3 days.
