- 6 slices bacon
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups potatoes, diced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons green onions, sliced
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and crumble, leaving the drippings.
- Add the ground beef to the pot and cook until browned. Drain excess fat.
- Add onions and garlic, cooking until softened.
- Stir in chicken broth, potatoes, Worcestershire sauce, pepper, and paprika. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in cheese and cream until melted and creamy.
- Serve hot, topped with crumbled bacon and green onions.
Notes
- For a bit of spice, add cayenne pepper to taste.
- This soup is best served immediately but can be stored in the fridge for up to 3 days.
