- 3-4 pounds beef chuck roast
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1 cup beef broth
- 2 tablespoons soy sauce
- 2 green chilies, slit
- 4 potatoes, quartered
- 2 carrots, sliced
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Sear the beef chuck roast on all sides until browned.
- Transfer the roast to the slow cooker.
- Add chopped onions, garlic, ginger, salt, black pepper, cumin, coriander, turmeric, beef broth, soy sauce, green chilies, potatoes, and carrots on top of the roast.
- Cover and cook on low for 8 hours or until the beef is tender.
- Shred the beef and mix with the vegetables before serving.
