Description

A hearty and rich beef stew inspired by Anthony Bourdain, perfect for a comforting meal.


Ingredients

  • 3 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 pound potatoes, diced
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the beef cubes in batches.
  2. Add onions and carrots to the pot; cook until softened.
  3. Stir in garlic and tomato paste; cook for another minute.
  4. Pour in the red wine and scrape up any browned bits from the bottom of the pot.
  5. Add beef broth, bay leaves, thyme, potatoes, and Worcestershire sauce.
  6. Bring to a simmer, cover, and cook for about 2-3 hours until the beef is tender.
  7. Season with salt and pepper before serving.
