- 3 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup red wine
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon thyme
- 1 pound potatoes, diced
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium-high heat. Brown the beef cubes in batches.
- Add onions and carrots to the pot; cook until softened.
- Stir in garlic and tomato paste; cook for another minute.
- Pour in the red wine and scrape up any browned bits from the bottom of the pot.
- Add beef broth, bay leaves, thyme, potatoes, and Worcestershire sauce.
- Bring to a simmer, cover, and cook for about 2-3 hours until the beef is tender.
- Season with salt and pepper before serving.
