- 1/4 cup flour
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced

- 1/2 teaspoon cayenne pepper
- 1 bay leaf
- 6 cups chicken broth
- 1 (14.5 ounces) can diced tomatoes
- 1 pound shrimp, peeled and deveined
- 2 green onions, sliced
- 1/4 cup fresh parsley, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat. Whisk in the flour and cook, stirring constantly, until it turns a dark brown color (approximately 15-20 minutes).
- Add the diced onion, bell pepper, celery, and garlic. Cook until softened, about 5-7 minutes.
- Stir in the thyme, salt, black pepper, cayenne pepper, and bay leaf.
- Gradually stir in the chicken broth and bring to a simmer.
- Add the diced tomatoes and simmer for 30 minutes.
- Stir in the shrimp and cook until pink and cooked through, about 3-5 minutes.
- Remove from heat and stir in green onions and parsley before serving.
Notes
- Serve with rice or crusty bread for a complete meal.
- This gumbo can also be made with other proteins like sausage or chicken.
