Ingredients

  • 1 pound white fish fillets (such as cod or tilapia)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can diced tomatoes (14 ounces)
  • 1 can coconut milk (14 ounces)
  • 2 cups vegetable broth
  • 1 tablespoon lime juice
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté until softened.
  2. Add red and green bell peppers, and cook for another 5 minutes.
  3. Stir in diced tomatoes, coconut milk, vegetable broth, lime juice, cumin, paprika, salt, and pepper. Bring to a simmer.
  4. Add fish fillets and cook until they are opaque and flaky, about 10 minutes.
  5. Garnish with fresh cilantro before serving.
