- 1 pound white fish fillets (such as cod or tilapia)
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can diced tomatoes (14 ounces)
- 1 can coconut milk (14 ounces)
- 2 cups vegetable broth
- 1 tablespoon lime juice
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté until softened.
- Add red and green bell peppers, and cook for another 5 minutes.
- Stir in diced tomatoes, coconut milk, vegetable broth, lime juice, cumin, paprika, salt, and pepper. Bring to a simmer.
- Add fish fillets and cook until they are opaque and flaky, about 10 minutes.
- Garnish with fresh cilantro before serving.
